Ingredients
- 2 whole Chicken Breasts , boned and skinned
- 1 tsp Salt
- 14/ tsp Black pepper
- 1/2 cup Coconut Milk
- 1/2 cup Gingerroot , chopped
- 3 Tbsp Whipping Cream
- 2 Tbsp Butter , melted
- 1 tsp Curry Powder
- 1 tsp Ground Coriander

Instructions
- Cut chicken breasts into long strips - 1/2 to 3/4 inch wide
- Mix with salt and pepper
- Combine remaining ingredients in a medium size bowl
- Stir in chicken
- Cover and marinate in refrigerator 4 - 6 hours
- Bring to room temperature before grilling
- Make Thai Satay Sauce
- Prepare grill, coals should be very hot
- Set grill close to coals
- Thread chicken onto 16 skewers
- Grill chicken 5 - 8 minutes on each side or until fully cooked, turning as needed. Do not overcook
- Serve with Thai Satay Sauce
