Ingredients
  • 2whole Chicken Breasts, boned and skinned
  • 1tsp Salt
  • 14/tsp Black pepper
  • 1/2cup Coconut Milk
  • 1/2cup Gingerroot, chopped
  • 3Tbsp Whipping Cream
  • 2Tbsp Butter, melted
  • 1tsp Curry Powder
  • 1tsp Ground Coriander
Instructions
  1. Cut chicken breasts into long strips - 1/2 to 3/4 inch wide
  2. Mix with salt and pepper
  3. Combine remaining ingredients in a medium size bowl
  4. Stir in chicken
  5. Cover and marinate in refrigerator 4 - 6 hours
  6. Bring to room temperature before grilling
  7. Make Thai Satay Sauce
  8. Prepare grill, coals should be very hot
  9. Set grill close to coals
  10. Thread chicken onto 16 skewers
  11. Grill chicken 5 - 8 minutes on each side or until fully cooked, turning as needed. Do not overcook
  12. Serve with Thai Satay Sauce
