Ingredients
- 2 Tbsp Olive Oil
- 2 lbs Small new potatoes , diced
- 1 sm-med onion , chopped
- 2 tsp Minced garlic
- 1 tsp Coarse Salt
- 1/2 tsp Pepper
- 8-10 Strips Cooked Bacon Slices , crumbled
- 1 Bunch Green Onions , chopped
- 3/4 C Ranch Dressing

Instructions
- Place oil in 15 x 10 jellyroll pan
- Add potatoes
- Add onion, garlic, salt and pepper
- Toss to coat potatoes and then pat into single layer
- Bake at 425 degrees for 30 - 35 minutes, stirring occasionally, until potatoes are fork tender.
- Put into large bowl
- Add bacon, green onions and dressing
- Salt and pepper to taste
- Either serve hot or cover and chill until ready to serve.
