Roasted New Potato Salad
Note - for crispier potatoes, bake 10 minutes longer, stirring once. May be served warm or chilled.
Ingredients
  • 2Tbsp Olive Oil
  • 2lbs Small new potatoes, diced
  • 1 sm-med onion, chopped
  • 2tsp Minced garlic
  • 1tsp Coarse Salt
  • 1/2tsp Pepper
  • 8-10Strips Cooked Bacon Slices, crumbled
  • 1Bunch Green Onions, chopped
  • 3/4C Ranch Dressing
Instructions
  1. Place oil in 15 x 10 jellyroll pan
  2. Add potatoes
  3. Add onion, garlic, salt and pepper
  4. Toss to coat potatoes and then pat into single layer
  5. Bake at 425 degrees for 30 - 35 minutes, stirring occasionally, until potatoes are fork tender.
  6. Put into large bowl
  7. Add bacon, green onions and dressing
  8. Salt and pepper to taste
  9. Either serve hot or cover and chill until ready to serve.
