Ingredients
- 3/4 C Shortening (softened)
- 1 C Chunk style or smooth peanut butter
- 1 C Brown Sugar (packed firm)
- 1 C Sugar
- 2 Eggs
- 1/2 C Milk
- 3 C Flour
- 1 1/2 tsp Salt
- 1 tsp Soda
- 3 C Quick or Old Fashioned Oats
- 3 dozen Large Marshmallows
- 15 1 oz Milk Chocolate Bars

Instructions
- Beat shortening until creamy
- Blend in peanut butter, sugars, eggs and milk
- Sift together salt, soda and flour. Add to creamed mixture.
- Beat until smooth
- Stir in oats
- Roll out on lightly floured board to 1/8th inch thickness.
- Cut with floured round cookie cutter.
- Place rounds on greased cookie sheet and bake in 350° oven for about 10 minutes.
- Remove from cookie sheets and cool
- At picnic, place four squares of chocolate bar and a toasted marshmallow between two cookie rounds and press together.
Recipe Notes
Options:
1. Place slice of ice cream between cookies and press together.
2. Instead of using round cookie cutter, cut dough into 3 x 1 inch strips, use pudding in between
