Picnic S'mores

Ingredients
  • 3/4C Shortening (softened)
  • 1C Chunk style or smooth peanut butter
  • 1C Brown Sugar (packed firm)
  • 1C Sugar
  • 2 Eggs
  • 1/2C Milk
  • 3C Flour
  • 1 1/2tsp Salt
  • 1tsp Soda
  • 3C Quick or Old Fashioned Oats
  • 3 dozen Large Marshmallows
  • 151 oz Milk Chocolate Bars
Instructions
  1. Beat shortening until creamy
  2. Blend in peanut butter, sugars, eggs and milk
  3. Sift together salt, soda and flour. Add to creamed mixture.
  4. Beat until smooth
  5. Stir in oats
  6. Roll out on lightly floured board to 1/8th inch thickness.
  7. Cut with floured round cookie cutter.
  8. Place rounds on greased cookie sheet and bake in 350° oven for about 10 minutes.
  9. Remove from cookie sheets and cool
  10. At picnic, place four squares of chocolate bar and a toasted marshmallow between two cookie rounds and press together.
Recipe Notes

Options:
1. Place slice of ice cream between cookies and press together.
2. Instead of using round cookie cutter, cut dough into 3 x 1 inch strips, use pudding in between
