Ingredients
- 1 1/2 lbs Ground Beef
- 1 Med Onion , chopped
- 1/2 Green Pepper , chopped
- 1/4 tsp Red Pepper , dried
- 2 Tbsp Oregano
- 1-2 tsp Celery Flakes or Seeds , more if using fresh chopped celery
- 1/2 tsp Black pepper
- 1 1/2 tsp Salt
- 2 Tbsp Minced garlic
- 1 tsp Parsley Flakes
- 8 Lasagna Noodles
- 6 oz Cottage Cheese , small curd
- 1 sm can Tomato Paste
- 1/2 C Parmesan cheese
- 2 lbs Mozzarella Cheese
- 6-8 oz Tomato Juice

Instructions
- Brown ground beef
- Add onion and brown
- Add peppers and cook until tender
- Drain excess fat
- Add all other spices
- Mix in tomato paste and set aside
- Boil noodles for 8 or 9 minutes until tender but not mushy
- Spray 13 x 9 pan with Cooking Spray
- Place 3 - 4 of the noodles in the bottom so that the bottom of the pan is covered.
- Put 1/2 of the cottage cheese on top of noodles spread evenly
- Sprinkle 1/2 of the mozzarella on top of cottage cheese
- Spread 1/2 of the meat mixture on top
- Sprinkle generously with parmesan cheese
- Sprinkle about 1/2 of tomato juice on top
- Repeat layers
- Bake at 350 degrees for 35 to 45 minutes. You should be able to see the sauces boiling up.
- Remove from oven and allow to cool about 10 minutes before serving.
