Lasagna
Great family or company dish The hardest part about putting some recipes into this collection is that I rarely measure as I cook and frequently change ingredients according to what is on hand or my mood so rarely is it exactly the same twice.
Ingredients
  • 1 1/2lbs Ground Beef
  • 1 Med Onion, chopped
  • 1/2 Green Pepper, chopped
  • 1/4tsp Red Pepper, dried
  • 2Tbsp Oregano
  • 1-2tsp Celery Flakes or Seeds, more if using fresh chopped celery
  • 1/2tsp Black pepper
  • 1 1/2tsp Salt
  • 2Tbsp Minced garlic
  • 1tsp Parsley Flakes
  • 8 Lasagna Noodles
  • 6oz Cottage Cheese, small curd
  • 1sm can Tomato Paste
  • 1/2C Parmesan cheese
  • 2lbs Mozzarella Cheese
  • 6-8oz Tomato Juice
Instructions
  1. Brown ground beef
  2. Add onion and brown
  3. Add peppers and cook until tender
  4. Drain excess fat
  5. Add all other spices
  6. Mix in tomato paste and set aside
  7. Boil noodles for 8 or 9 minutes until tender but not mushy
  8. Spray 13 x 9 pan with Cooking Spray
  9. Place 3 - 4 of the noodles in the bottom so that the bottom of the pan is covered.
  10. Put 1/2 of the cottage cheese on top of noodles spread evenly
  11. Sprinkle 1/2 of the mozzarella on top of cottage cheese
  12. Spread 1/2 of the meat mixture on top
  13. Sprinkle generously with parmesan cheese
  14. Sprinkle about 1/2 of tomato juice on top
  15. Repeat layers
  16. Bake at 350 degrees for 35 to 45 minutes. You should be able to see the sauces boiling up.
  17. Remove from oven and allow to cool about 10 minutes before serving.
