Ingredients
- 1 lb Sugar
- 1 lb Raw Carrots
- 1/4 tsp Ginger
- 1/2 C Chopped nuts

Instructions
- Mix carrots and sugar
- Cook over low heat, stirring often to prevent scorching. Should become very thick like jam
- Add ginger
- Add nuts
- Spread out on to greased cookie sheet
- Let cool about 1 hour
- Cut into squares and let stand another hour
- Store in covered dish
