Carrot Candy

Ingredients
  • 1lb Sugar
  • 1lb Raw Carrots
  • 1/4tsp Ginger
  • 1/2C Chopped nuts
Instructions
  1. Mix carrots and sugar
  2. Cook over low heat, stirring often to prevent scorching. Should become very thick like jam
  3. Add ginger
  4. Add nuts
  5. Spread out on to greased cookie sheet
  6. Let cool about 1 hour
  7. Cut into squares and let stand another hour
  8. Store in covered dish
