Hot & Sour Shrimp Soup

Ingredients
  • 30medium shrimp
  • 4C Water
  • 10 thin Gingerroot slices
  • 2 Lemongrass stalkssliced
  • 3tbsp Lemon Juice
  • 3 tbsp Fish Sauce
  • 2-4 Serrano Chilessliced
  • 4 kaffir Lime Leavescoarsely broken
  • 1/2tsp Salt
  • 2tbsp Cilantro Leaves
Instructions
  1. Shell shrimp and remove devein
  2. Bring water to a boil in a 2 qt saucepan
  3. Add gingerroot and lemon grass
  4. Add shrimp to saucepan and bring to a boil
  5. Add lemon juice, fish sauce, chilies, lime leaves and salt
  6. Boil for 2 minutes or just until shrimp turn pink
  7. Ladle into individual bowls
  8. Top each serving with cilantro leaves.
