Spicy Three Bean Chili
Makes 10, one cup servings
Ingredients
  • 2Tbsp Olive Oil
  • 2C Onion, chopped
  • 1/2C Celery, chopped
  • 1/2C Carrots, sliced
  • 1/2C Green Pepper, chopped
  • 1C Zucchini, cut in 1/4" cubes
  • 2 Jalepeno Peppers, minced
  • 228 oz cans Italian Style Plum Tomatoes
  • 1Tbsp Chili Powder
  • 1Tbsp Ground Cumin
  • 1tsp Oregano Leaves
  • 1tsp Basil Leaves
  • 1/2tsp Salt
  • 1/2tsp Pepper
  • 1/4tsp Garlic Powder
  • 1/8tsp Cayenne Pepper
  • 115 oz can Pinto Beans, drained
  • 1Tbsp Lemon Juice
  • Grated Monterey Jack Cheese
  • Sliced Green Onions
Instructions
  1. Heat oil
  2. Add onions, celery, carrots and green pepper
  3. Saute 5 minutes
  4. Add jalapeno peppers, tomatoes, chili powder, cumin, oregano, basil, salt, pepper, garlic and cayenne
  5. Mix well, breaking up tomatoes
  6. Cook for 30 minutes stirring occasionally
  7. Add beans
  8. Simmer for 15 minutes
  9. Add lemon juice before serving
  10. Top each serving with grated cheese and green onions.
