Southwestern Baked Beans
Vegetarian Dish Serves 8 - 10
Ingredients
  • 215 1/2 oz cans Dark red kidney beans
  • 116 oz can Black beans
  • 119 oz can White Kidney Beans
  • 128 oz can Italian Plum Tomatoes, drained and chopped
  • 1C Yellow Onion, chopped
  • 2 Lg Cloves Garlic
  • 1/4C Molasses
  • 1/4C Vinegar
  • 2Tbsp Honey
  • 2tsp Dried Oregano
  • 2tsp Dry Mustard
  • 1-2tsp Ground Cumin
  • 1 1/2tsp Ginger
  • 1tsp Red Pepper
  • Salt to Taste
Instructions
  1. Preheat oven to 350 degrees
  2. Rinse and drain beans in colander
  3. Place in oven proof casserole dish
  4. Add remaining ingredients
  5. Fold together gently so that the beans do not break up,
  6. Bake covered for one hour
  7. Remove cover, stir and bake for additional hour
