Ingredients
- 1 C Unsalted Butter
- 1/2 C Light Brown Sugar
- 4 Eggs
- Juice of one lime
- 1/4 tsp Grated Lime Peel
- 2 C Flour
- 1/2 C Cornstarch
- 2 tsp Baking Powder
- 1/3 C Barbados Rum

Instructions
- Preheat oven to 350 degrees and grease a 9 x 5 loaf pan
- Cream butter and sugar together
- Add eggs, one at a time beating mixture after each egg
- Add lime juice and rind and stir well
- Add dry ingredients, stir well
- Add rum and stir well
- Pour batter into loaf pan
- Bake for 1 1/2 hours or until golden brown. A knife inserted into the center should come out clean.
- Serve warm with Rum Raisin Ice Cream
