Roasted Green Beans
his recipe keeps the snap in the beans This recipe comes from Cooking Light magazine. After trying, I have modified the recipe a bit for the next time. The beans were good but needed a little bit. My modifications are noted. This recipe is from epicurious.com.

Ingredients
  • 2lbs Fresh green beans - washed and tipped
  • 4Tbsp Extra Virgin Olive Oil
  • 1tsp Sea Salt
  • 1/2tsp Freshly ground black pepper
  • 1sm diced red pepper
  • 1/2pt cherry tomatoes cut in halfModification
  • 1/2tsp Minced garlicModification
  • Olive Oil - Extra VirginModification
Instructions
  1. Preheat oven to 425 degrees
  2. Place a jelly roll pan in oven for 10 minutes
  3. Place beans and other vegetables in a large bowl
  4. Drizzle with oil
  5. Sprinkle with spices
  6. Toss well to coat
  7. Arrange bean mixture on heated baking sheet in a single layer.
  8. Bake at 425 degrees for 8 minutes
  9. Serves 12
