Red Velvet Cake with Raspberries and Blueberries
Beautiful presentation, wonderful flavor. Jenn made this cake for Pat's birthday party. It was a hit and a conversation piece. Yield 10 - 12 servings. May be made one day ahead and refrigerated. Let stand at room temp one hour before serving.
Ingredients
Cake
  • 2 1/4 C Sifted Cake Flour
  • 1/2C Unsweetened Cocoa Powder, heaping
  • 1tsp Baking Powder
  • 1tsp Baking Soda
  • 1/2tsp Salt
  • 1C Buttermilk
  • 2Tbsp Red Food Coloring
  • 1tsp Distilled White Vinegar
  • 1tsp Vanilla Extract
  • 1 1/2C Sugar
  • 1C Unsalted Butter, room temperature
  • 1/3C Oil
  • 2 Large Eggs
  • 1pt Fresh Raspberries
  • 1pt Fresh Blueberries
Frosting
  • 28 oz pkgs Cream Cheese, room temperature
  • 1/2C Unsalted Butter, room temeperature
  • 1Tbsp Vanilla Extract
  • 2 1/2C Powdered Sugar
Instructions
Cake
  1. Preheat oven to 350 degrees.
  2. Butter and flour two 9" cake pans with 1 1/2 inch high sides
  3. Sift sifted flour, cocoa powder, baking powder, baking soda and salt into medium bowl.
  4. Whisk buttermilk, food coloring, vinegar and vanilla in a small bowl to blend.
  5. Using electric mixer, beat sugar and butter in large bowl until well blended.
  6. Add eggs one at a time until well blended after each addition.
  7. Beat in dry ingredients in four additions alternating with buttermilk mixture in three additions.
  8. Divide batter between prepared pans.
  9. Bake cakes until tester inserted in center comes out clean, about 27 minutes.
  10. Cool in pans on racks for 10 minutes
  11. Turn cakes out onto racks and cool completely
Frosting
  1. Beat cream cheese and butter in large bowl until smooth.
  2. Beat in vanilla
  3. Add powdered sugar and beat until smooth
  4. Place one cake layer flat side up on platter.
  5. Spread 1 cup of frosting over top of cake.
  6. Arrange 1/2 of raspberries and 1/2 of blueberries atop frosting, pressing slightly to adhere.
  7. Top with second layer flat side down.
  8. Spread remaining frosting over top and sides of cake.
  9. Arrange remaining berries decoratively over to of cake
