Queen Elizabeth Cake
From the Manassas Gourmet Club Dinner "An English Holiday"
Ingredients
  • 1C Boiling Water
  • 1C Chopped Dates
  • 1tsp Baking Soda
  • 1C Sugar
  • 1 Egg
  • 1 1/4C Flour
  • 1tsp Baking Powder
  • 1/4tsp Salt
  • 1tsp Vanilla Extract
  • 1/3C Pecans, chopped
  • 1/4 C Brown Sugar, packed firm
  • 1Tbsp Brown Sugar, packed firm
  • 1/4 C Whipping Cream
  • 1Tbsp Whipping Cream
  • 2Tbsp Butter
  • Pecan Halves
  • Maraschino Cherries
Instructions
  1. Combine water, dates and soda, stir well and let stand 15 minutes
  2. Cream 1/4 C butter
  3. Gradually add 1 C sugar, beating well
  4. Add egg and beat
  5. Combine flour, baking powder and salt and add to creamed mixture alternating with date mixture, mix after each addition
  6. Stir in vanilla and chopped pecans
  7. Pour batter into greased 8 1/2 x 4 1/2 loaf pan.
  8. Bake at 350 for 55 to 60 minutes
  9. Remove from pan and place on serving platter
  10. Combine brown sugar, cream and 2 Tbsp butter in saucepan and stir well
  11. Reduce heat to low and simmer for 3 - 5 minute, stirring constantly until slightly thickened
  12. Pour over cake
  13. Let cool completely
  14. Garnish with pecan halves and cherries.
