Plantain Chips
From the Manassas Gourmet Club dinner Caribbean Cruise. You can use green bananas if plantains are not available
Ingredients
  • Green or Half Ripe Plantains
  • Oil for Deep Frying
  • Salt
  • Ice Water
Instructions
  1. Peel the plantains under running water to avoid staining hands
  2. Slice crosswise as thinly as possible
  3. Drop into salted ice water and let stand for 30 minutes
  4. Drain and dry on paper towels
  5. Fry until delicately browned in deep oil heated to 370 degrees on a frying thermometer
  6. Drain on paper towels
  7. Sprinkle with salt
