Pineapple Casserole
Elsie Sacre made this for a neighborhood Christmas event and got rave reviews. Double recipe for large pan.
Ingredients
  • 1cup Sugar
  • 6Tbsp Flour
  • 2cup Sharp Cheddar Cheese, grated
  • 20ounce can Pineapple Tidbits, drained
Topping
  • 1sleeve Ritz Crackers, broken into crumbs
  • 4Tbsp Butter or Margarine, melted
  • 6Tbsp Pineapple Juice reserved from Tidbits
Instructions
  1. Preheat oven to 350
  2. Grease medium size casserole dish or spray with vegetable oil
  3. In large bowl, stir together sugar and flour
  4. Gradually stir in the cheese
  5. add both cans of pineapple and stir until everything is combined
  6. Pour into prepared casserole dish
  7. Make topping by combining all topping ingredients and stirring until blended
  8. Spread crumb mixture over top of pineapple mixture
  9. Bake about 25 - 30 minutes or until crumbs are golden brown.
