Pastel de Patata con Romero
Potatoes with Rosemary From the Manassas Gourmet Club Night of Discovery Dinner celebrating Columbus Day 6 to 8 servings
Ingredients
  • 1/4C Margarine or Butter
  • 2 lrg Onions, sliced thin
  • 2tsp Snipped Fresh Rosemary Leaves
  • 1/2tsp Salt
  • 1/4tsp Coarsely Ground Pepper
  • 4 Med Baking Potatoes, sliced thin
  • 1C Half & Half
Instructions
  1. Preheat oven to 350 degrees
  2. Grease a 10" pie plate
  3. Melt margarine in 10" skillet
  4. Add onions and stir over low heat until soft and beginning to brown about 20 minutes
  5. Arrange 1/2 of potato slices in bottom of pie plate
  6. Top with half of the onion mixture
  7. Repeat layers
  8. Pour Half and Half over top
  9. Cover with foil and cook in oven one hour.
  10. Uncover and cook until top is golden brown about 20 minutes longer
  11. Cut into wedges and serve.
