Myrna's Pineapple Cookies
Soft cake like cookie for pineapple lovers Myrna Fowler always brought these favorites to reunions and other family gatherings.
Ingredients
  • 1C Shortening
  • 1C Brown Sugar
  • 1C White Sugar
  • 4C Flour
  • 1C Crushed Pineapple & Juice
  • 2 Eggs
  • 1tsp Baking Powder
  • 1tsp Vanilla
  • 2tsp Baking Powder
  • 1tsp Salt
  • 1/2C Peacans, chopped
Instructions
  1. Cream shortening and sugars
  2. Add eggs and vanilla
  3. Add pineapple and juice
  4. Add soda, baking powder, and salt
  5. Mix in flour
  6. Add pecans
  7. Drop by spoonfuls on greased cookie sheet
  8. Bake at 350 degrees until slightly brown around the edges and firm.
  9. Store in airtight container
