Mrs. Daniels' Marzipan Bars
A very special treat Mrs. Daniels served these when we visited her in Richmond Hill, Ontario. Colorful and festive with great flavor.
Ingredients
Dough and filling
  • Pie pastry
  • Raspberry Jam
  • 1/2C Margarine
  • 2/3C Sugar
  • 2 Eggs
  • 2/3C Rice Flour
  • 1/2tsp Salt
  • Pink and green food coloring
Icing
  • 2Tbsp Margarine
  • 1 1/2C Confectioners Sugar
  • 2Tbsp Warm Milk
  • 1tsp Almond Extract
Instructions
  1. Line 8" square pan with pie pastry
  2. Spread raspberry jam on top of pastry
  3. Blend margarine and sugar
  4. Add eggs and beat till light and fluffy
  5. Add rice flour and salt - beat well.
  6. Divide dough into two bowls
  7. Color dough in one bowl pink and in the other bowl green
  8. Put small spoonfuls of each on the jam alternating to form a checkerboard pattern
  9. Bake 35 minutes at 375 degrees.
  10. Cool
  11. Mix all ingredients for icing and frost.
  12. Cut into small bars and serve
  13. Store in airtight container
