Moist and Flavorful
Ginnie Goheen made this meatloaf and it was always a family favorite. No actual measurements were ever used so the measurements shown are approximate. Shape into the number and size of loaves that you want. Freezes well.
Ingredients
Meatloaf
2lbsGround Beef, low fat content
2Eggs
1SleeveSaltines, crushed
Milk to not quite cover the saltines
1Med Onion Chopped
1Med Green Pepper Chopped
1 1/2tspSalt
1tspPepper
1TbspPowdered Garlic
1tspCrushed Red Pepper
Topping
1/4CCatsup
3TbspBrown Sugar
1/4tspGround Nutmeg
1tspDry Mustard
Instructions
Put ground beef and eggs together in a large bowl.
Crush crackers into clear glass bowl or measuring cup.
Pour in enough milk to not quite cover the crackers, stir and set aside.
Add other ingredients
Once crackers have absorbed all of the milk, add mixture to meat.
Mix all ingredients together well.
Shape into a loaf or loaves and bake for 45 minutes at 350 degrees.
If desired, garnish with bacon strips, mushrooms or green pepper strips
Mix topping ingredients together and coat top and sides of meatloaf
Return to the oven and bake another 15 minutes or until meat thermometer shows beef well.
Note - the size of the loaf will determine baking time
