Mom's Christmas Cookies
Great fun to make especially when young ones are around to decorate the cookies after they are baked. This recipe came from Ginnie Goheen and will always be remembered as a Christmas favorite. Sometimes the decorated cookies were made with a hole at the top for a ribbon so that they could be hung on trees. Makes about 5 dozen cookies.
Ingredients
  • 1/3C Soft Shortening (margarine)
  • 1/3C Sugar
  • 1 Egg
  • 2/3C Honey or Light Molasses
  • 2 3/4C Flour
  • 1tsp Baking Soda
  • 1tsp Salt
  • 2tsp Cinnamon
  • 1tsp Ginger
Instructions
  1. Cream shortening and sugar.
  2. Mix in egg and honey or molasses
  3. Add baking soda, salt, cinnamon and ginger.
  4. Mix in flour
  5. Chill dough at least 1 hour
  6. Roll out thick (about 1/4 inch)
  7. Cut into shapes and place on lightly greased cookie sheet about 1 inch apart.
  8. Bake in preheated oven at 350 degrees until no imprint remains when touched.
  9. Cool
  10. Ice and decorate.
