Michelle's Scalloped Oysters
From Cassie Corkran Reheats well
Ingredients
  • 1C Butter (2 sticks)
  • 3/4C Flour
  • 1 1/2tsp Paprika
  • 1 1/2tsp Salt (depending on how salty the oysters are.)
  • 1/2tsp Pepper
  • Dash Cayenne
  • 1 Clove Minced Garlic
  • 1 Medium Onion, chopped
  • 1/2 Medium Green Pepper
  • 1qt Oysters with most of the liquid
  • 1Tbsp Lemon Juice
  • 2Tbsp Worcestershire Sauce
  • 1/2C Cracker or Bread Crumbs
Instructions
  1. Grease 2 qt. casserole.
  2. Melt butter in large skillet.
  3. Add flour and make a roux.
  4. Cook until golden brown
  5. Add garlic, onions, pepper and seasonings.
  6. Cook until tender, about 5-6 minutes.
  7. Add oysters with liquid, lemon.
  8. Stir well.
  9. Cook about 2 minutes.
  10. Pour into casserole.
  11. Sprinkle with cracker or bread crumbs.
  12. Bake at 400 degrees for 20-25 minutes (or more).
