Mama Mia Vegetable Pie
From Barb Bieganski Note, any meat can be substituted for tofu. May also use spaghetti squash or whole wheat spaghetti noodles.
Ingredients
  • 1tsp Olive Oil
  • 1 Med Bell Pepper, chopped
  • 1 Sm Onion chopped
  • 3 Med Portobello Mushrooms, chopped (about 1/2 C)
  • 112 oz can Tomato Sauce
  • 6oz Firm Tofu, drained and crumbled
  • 2C Cooked Spaghetti
  • 3/4C Part-Skim Mozzarella Cheese, shredded
  • Cooking spray
Instructions
  1. Heat oven to 375 degrees
  2. Heat oil in non-stick skillet over med heat.
  3. Add pepper, onion and mushroom, sauté until vegetables are tender, about 5 minutes.
  4. Stir in tomato sauce and tofu. (make sure tofu is drained).
  5. Bring to a boil
  6. Reduce heat and simmer mixture uncovered for 10 minutes
  7. Coat a 9" deep pie plate with cooking spray
  8. Arrange spaghetti in bottom and up sides of pan.
  9. Pour tofu mixture over spaghetti and sprinkle with cheese.
  10. Bake 20 minutes
  11. Let stand for five minutes before slicing into six pieces.
