Jenn's Cheesecake
Light, moist but not gooey, great taste. Jenn began making cheesecake for her Dad and perfected her recipe.
Ingredients
  • 1 1/2C Graham Cracker Crumbs
  • 1 2/3C Sugar, divided
  • 1/4C Margarine, melted
  • 48 oz pkgs Cream Cheese, softened
  • 1/2 C Whipping Cream
  • 2tsp Vanilla Extract
  • 2tsp Grated Lemon Peel
Instructions
  1. Preheat oven to 325 degrees
  2. Lightly spray 9" Springform pan with cooking spray
  3. In medium bowl combine crumbs, 2 Tbsp sugar and margarine. Mix well
  4. Press mixture into bottom and 1 inch up sides of prepared pan
  5. Bake 5 minutes. Remove to a wire rack to cool
  6. In a large bowl, beat cream cheese and remaining sugar until smooth.
  7. Add eggs, one at a time, beating well after each addition
  8. Beat in cream, vanilla and lemon peel until blended.
  9. Pour mixture into crust.
  10. Bake 1 hour and 15 minutes or until center is set - don't over bake.
  11. Cool cake in pan on wire rack
  12. When cool, cover and refrigerate 2 hours until well chilled.
