Figs & Sausages
Another specialty from the Weathers. They are creative in their arrangement of the ingredients. Use your imagination.
Ingredients
  • 1lb Fresh Brown Turkey Figs
  • 2Whole Cinnamon Sticks
  • 7-8whole Cloves
  • pinch Allspice
  • 1slice Lemon
  • 1cup Red Wine Vinegar
  • 1lb Mild Italian Sausage
  • 1/2cup White Wine
  • 3Tbsp Olive Oil
  • Cooked Orzo
Instructions
  1. Boil the vinegar, sugar and spices about 10 minutes
  2. Add the whole figs and simmer for 20 - 25 minutes.
  3. Refrigerate overnight
  4. When ready to serve, discard the cinnamon sticks and cloves
  5. Heat sauce separately from the figs
  6. In the meantime, sauté the sausages in the olive oil until brown on all sides
  7. Add the wine and simmer for about 15 to 20 minutes.
  8. Place the sausages on a plate with the cooked orzo. Arrange the figs around the sausages. Pour sauce over all.
