Chili con Queso

Ingredients
  • 1Large Onion, finely chopped
  • 1Tbsp Bacon Drippings
  • 2x 10ounce cans Tomatoes with Green Chilies, undrained
  • 4ounce can Chopped Green Chilies
  • 1tsp Salt
  • 1/8tsp Pepper
  • 4cups Shredded American Cheese
Instructions
  1. Saute onion in bacon drippings in a large skillet until tender
  2. Drain tomatoes, reserving juice and coarsely chop
  3. Add tomatoes, green chilies, salt and pepper to onion
  4. Add cheese
  5. Cover and cook over low heat, stirring constantly until cheese melts
  6. Thin cheese mixture to desired consistency using reserved juice, one tablespoon at a time
  7. Serve warm with tortilla chips
