Chickpea Pate
Middle eastern spread, delicious with crackers, wedges of pita bread or fresh vegetable slices. Also makes a delicious sandwich spread.
Ingredients
  • 2cups Chickpeas, cooked
  • 2cloves Garlic, minced
  • 1/4cup Tahini(sesame seed butter)
  • 2Tbsp Lemon Juice
  • 1/4tsp Salt
  • 1Tbsp Parsley, finely chopped
  • 1/2tsp Ground Cumin
  • 1/2tsp Paprika
Instructions
  1. Drain chickpeas, reserving liquid
  2. Mash the chickpeas
  3. Add remaining ingredients and mix well using blender or food processor
  4. Should be creamy and spreadable
  5. If it is too dry, add some of the reserved liquid to achieve desired consistency
