Broccoli Cauliflower Salad
From the Manassas Gourmet Club Dinner "An English Holiday" Serves 6 - 8
Ingredients
  • 1 Lemon
  • 2 Cloves garlic
  • 3Tbsp Salt
  • 3qts Water
  • 1 Med Cauliflower, broken into florets
  • 4C Broccoli Florets
  • 1pt Cherry Tomatoes
  • 1C Mayonnaise
  • 2Tbsp Fresh Lemon Juice
  • 1/2tsp Dry Mustard
Instructions
  1. Remove rind from lemon and set aside
  2. Combine lemon rind, garlic, salt and water in a large Dutch oven and bring to a boil for 5 minutes
  3. Add cauliflower and broccoli florets and boil about 5 minutes until vegetables are tender
  4. Drain vegetables, discard lemon rind and garlic
  5. Rinse under running water
  6. Arrange vegetables on a platter in rings and put the tomatoes in the center
  7. Make dressing by combining mayonnaise, lemon juice and mustard in a small bowl, stir well
  8. Cover and chill
  9. Serve dressing with salad
