Black Tie Standing Rib Roast

Ingredients
  • 2tsp Salt
  • 1tsp Freshly Ground Pepper
  • 1tsp Dried Whole Thyme
  • 10lb Standing Rib Roast
  • 2/3C Water
  • 1/4C Butter
  • 1 1/2Tbsp Butter
  • 2Tbsp Lemon Juice
  • 1/4tsp Salt
  • 1/2lb Small Fresh Mushrooms, sliced
  • 1C Minced Shallots
  • 1C Canned Diluted Beef Broth
  • 1/2C Madeira Wine
  • Salt and Pepper, to taste
  • 1Tbsp Tomato Paste
Instructions
  1. Combine salt, 1 tsp pepper, and thyme
  2. Sprinkle mixture over roast and set aside
  3. Combine water, 1 1/2 Tbsp Butter, lemon juice and 1/4 tsp salt in a medium saucepan
  4. Bring to a boil
  5. Add mushrooms, cover and reduce heat
  6. Cook for 5 minutes
  7. Drain mushrooms, reserving liquid and set aside
  8. Add water to liquid from mushrooms to measure 1 cup and set aside
  9. Place roast, fat side up on a rack in a shallow roasting pan
  10. Insert meat thermometer making sure it does not touch fat or bone
  11. Bake at 500 degrees for 10 minutes then reduce oven heat to 350 and bake for 3 hours or until the thermometer registers the beef wellness of your choice
  12. Remove roast to serving platter
  13. Drain drippings reserving 1 cup
  14. Return 1 cup of drippings to pan
  15. Add remaining butter, cook over med heat until butter melts
  16. Add shallots and sauté until tender
  17. Stir in reserved mushroom liquid, beef broth, wine and tomato paste
  18. Cook over low heat for 15 - 20 minutes until liquid is reduced to 2 cups
  19. Add reserved mushrooms and cook until heated
  20. Salt and pepper to taste
  21. Serve sauce with roast.
