Ingredients
  • 5lbs Hamburger, with high fat content
  • 5Tbsp Morton Quick Salt
  • 2 1/2tsp Mustard Seed
  • 2 1/2tsp Course Pepper
  • 2 1/2 tsp Garlic Salt
  • Peppers or other spices for variety
Instructions
  1. Mix all together
  2. Cover and refrigerate for five days
  3. On the second, third and fourth days, knead for five minutes. (It is helpful to wear latex gloves as the meat is cold.)
  4. On the fifth day, shape meat into six logs.
  5. Place on a broiler pan in oven at 160 degrees for 4 1/2 hours
  6. Roll the logs and bake for another 4 1/2 hours.
  7. Remove and wrap in paper towels for fifteen minutes to drain
  8. Remove from paper towels
  9. Wrap in foil and refrigerate up to three weeks
