From the Manassas Gourmet Club Dinner Caribbean Cruise. Makes 2 Dozen
Ingredients
  • 2Cups Flour
  • 1/2tsp Salt
  • 2tsp Baking Powder
  • 2Tbsp Margarine
  • 2tsp Light Brown Sugar
  • 1/2Cup Water
  • 1Cup Vegetable Oil for Frying
Instructions
  1. Sift dry ingredients into a large bowl.
  2. Rub margarine into dry ingredients until you have a mixture with a cornmeal-like texture.
  3. Dissolve the sugar in the water and add to dry ingredients
  4. Mix until you have a soft dough
  5. Knead dough lightly for 5 minutes
  6. Cut into 1 1/2" pieces
  7. Heat oil in heavy cast iron pot until it smokes
  8. Roll pieces into balls, then flatten to 1/4" thick
  9. Drop into oil a few at a time and cook about 1 minute or until browned
  10. Alternate - May cook these on a hot greased griddle instead of frying. Will take longer and need turning to brown all sides.
