Aunt Veronica's Sour Cream Coffee Cake
Easy to make bundt style cake. Aunt Veronica used to keep at least one of these cakes in the freezer so that she was ready whenever company came.
Ingredients
Cake Batter
  • 1/4lb Butter or Margarine
  • 1C Sugar
  • 2 Large Eggs
  • 1tsp Baking Soda
  • 1C Sour Cream
  • 1 1/2C Flour
  • 1 1/2tsp Baking Powder
  • 1tsp Vanilla
Topping
  • 1/2C Sugar
  • 1tsp Flour
  • 1/2C Chopped nuts
Optional
  • Simple Butter Frosting
  • 1tsp Rum
Instructions
  1. Mix together baking soda and sour cream and set aside. Use at least a 2 cup bowl as it will rise.
  2. Cream butter and sugar
  3. Add eggs and vanilla
  4. Blend in baking powder and flour
  5. Fold in sour cream mixture
  6. Pour into greased and floured bundt or angel food cake pan
  7. Mix together topping
  8. Spread 2/3rds of topping on top of batter. Using a table knife, sweep topping into batter so that it is not mixed in but is in a swirl.
  9. Sprinkle remaining topping on top of batter.
  10. Bake at 350 degrees for 45 to 50 minutes
  11. Cool completely
  12. Glaze if desired with simple butter frosting mixed with a teaspoon of rum
