Aunt Edith's Sweet Pickles
Ingredients
  • 1gal Medium Pickling CucumbersCan use larger cucumbers if desired.
  • 1cup Pickling Salt
  • 3gal Water
  • 1tbsp Alumheaping
  • 1tbsp Gingerheaping
  • 1/2box Pickling Spice
  • 8cups Sugar
  • 5 1/2cups Vinegar
  • 2 2/3cups Water
  • 1tsp Celery Seed
Instructions
  1. Wash and cut cucumbers into slices 1/2 inch thick.
  2. Cover with brine made of 1 gal water and 1 C salt
  3. Let stand for 4 days
  4. On the fifth day drain off brine and wash
  5. Cover with 1 gal water and 1 Tbsp alum (heaping)
  6. Let stand overnight
  7. Next day, drain off and put drained cucumbers in kettle and add 1 gal water and ginger
  8. Boil 10 minutes.
  9. While boiling, fix syrup using last five ingredients. Spice should be tied in a cloth.
  10. Cook until it boils and is clear.
  11. At the end of 10 minutes, drain and pour syrup over pickles.
  12. Boil until transparent and seal in jars.
