Apple Salad
Tasty with interesting textures. Either make your own granola or purchase low fat apple granola ready made. This was an experiment that turned out pretty well.
Ingredients
  • 1/2C Low Fat Sour Cream
Granola
  • 1C Old Fashioned Oats
  • 3/4C Flour
  • 1/2C Brown Sugar
  • 2-3tsp Cinnamon
  • 1/4tsp Salt (may use sea salt)
  • 1/2tsp Unsalted Butter
  • 3/4C Walnuts chopped
Salad
  • 1head Iceberg lettuce, washed, tried and torn
  • 1/2 Onione chopped fine
  • 2 Lg Stalks Celery
  • 6strips Bacon, fried, drained and crumbled or Real Bacon Bits
  • 1C Green Grapes, washed and cut in half
  • Handful Craisins
  • Handful Raisins
  • 1/2C Miracle Whip or Mayonnaise
  • 1/2C Low Fat Sour Cream
  • 4-5 Granny Smith or other tart Apple, sliced, washed in lemon juice and cut into pieces.
Instructions
Granola
  1. Mix together dry ingredients
  2. Cut in butter
  3. Mix in walnuts
  4. Rub mixture between fingers to form clumps
  5. Spread onto a cookie sheet
  6. Bake at 350 degrees, stirring occasionally
  7. Cool completely before using
Salad
  1. In a separate bowl, mix together mayo and sour cream
  2. Set aside
  3. Put lettuce, onion. celery, bacon, grapes, craisins, and raisins in salad bowl layering in the order shown
  4. Put apples into mayo mixture, a little of the lemon juice on the apples is fine.
  5. Spread apple mixture over salad mixture
  6. Pour cooled granola over apple mixture
  7. Cover tightly with a lid or wrap and chill at least two hours
  8. When ready to serve, toss together.
