Zucchini Walnut Quiche
This one just looked interesting from an old clipping that I found. Source unknown. If edges of pie crust brown to quickly cover edges with tin foil
Ingredients
  • 1 9" Frozen Pie Shell
  • 1/4cup Ground Walnuts
  • 1 - 2Tbsp Prepared Mustard
  • 4 Medium Zucchini, sliced thin
  • Boiling Water
  • 1/3cup Chopped Walnuts
  • Salt & Pepper
  • 2 Eggs, beaten
  • 1 1/4 cup Milk or Light Cream
  • 1/3cup Shredded Jack or Muenster Cheese
Instructions
  1. Mix or press ground walnuts into pie crust or mix into flour if making from scratch
  2. Spread bottom of crust in pie pan with mustard
  3. Use fork to prick bottom and sides
  4. Bake at 400 degrees for 10 minutes
  5. Remove from oven and set aside
  6. Cook zucchini in boiling water for three minutes, then drain
  7. Sprinkle pie shell with chopped walnuts and arrange zucchini on top
  8. Beat eggs, milk, 1/4 teaspoon salt and pepper
  9. Pour egg mixture over zucchini
  10. Sprinkle with cheese
  11. Bake 40 minutes at 375 degrees until knife inserted in center comes out clean
