Texas Chef Salad
This recipe was on a Quaker Oats card in Jeanette's recipe stand.
Ingredients
Meatball Mixture
  • 1lb Ground Beef
  • 2/3C Quaker Oats (quick or old fashioned - uncooked)
  • 1/3C Catsup
  • 1tsp Chili Pepper
  • 1/4tsp Pepper
  • 1C Chopped Onion
  • 2/3C Melted Shortening
  • 116 oz can Kidney Beans well drained
Salad
  • 1head Lettuce cut in chunks
  • 1C Shredded Cheddar Cheese
  • 3C Corn Chips crushed
  • 3 Tomatoes, cut in wedges
  • 1 peeled and sliced Avocado
  • 1C spicy sweet French dressing
Instructions
For Meatballs
  1. Make meatballs first
  2. Combine meat, oats, catsup, salt, chili powder, and pepper
  3. Shape into small balls
  4. Brown meatballs and onion in shortening.
  5. Drain
  6. Stir in kidney beans
  7. Cover and let stand 10 min.
For Salad
  1. Combine lettuce, cheese, corn chips, tomatoes and avocado.
  2. Reserve several avocado slices ad tomato wedges for garnish.
  3. Add meatball mixture and dressing
  4. Toss lightly
  5. Garnish with remaining tomatoes and avocados/
