Sweet Potato Apple Salad
Tastes great and looks pretty This is a low cholesterol salad that you can make ahead and have ready to serve in individual portions on your best salad plates.
Ingredients
Orange Dressing
  • 1/3C Vegetable Oil
  • 3Tbsp Red Wine Vinegar
  • 3Tbsp Orange Juice
  • 2tsp Grated fresh Orange Rind
  • 1/2tsp Salt
Salad
  • 1 1/2lbs Sweet Potatoes
  • 1 Granny Smith Apple
  • 1/4C Shallots or Green Onion, chopped fine
  • 1bunch Watercress
  • Romaine or Bibb Lettuce
  • 1 Belgium Endive
  • 1/2C Pecans, toasted
Instructions
  1. Prepare orange dressing by combining ingredients and setting aside.
  2. Peel, cube and boil sweet potatoes. Drain when finished and put in mixing bowl.
  3. Cut apple into thin slices or cubes and add to potatoes
  4. Core endive and separate leaves and set aside.
  5. Add onions and one half of the dressing
  6. Put watercress in separate bowl and put in remaining dressing
  7. Put lettuce on plates as a base. Place watercress on top.
  8. Arrange sweet potato mixture and endive leaves on top
  9. Garnish with pecans, orange rind rings and if desired dried cranberries
  10. Do not assemble very far ahead of serving as watercress will get soggy.
