Spinach Bacon Roll-Ups
This recipe came from Peg Gorman, the gourmet cook of Hillcrest Estates. It was a favorite that she served to our bridge group. A pinch of garlic added to the spinach mixture really adds to the flavor.
Ingredients
  • gslices Bacon
  • 1package Frozed Spinach, thawed and squeezed dry
  • 4ounces Cream Cheese. room temperature
  • 1tsp Salt
  • 1/4cup Mayonnaise
  • 1/2tsp Pepper
  • 1/2cup Chopped Green Onion
  • 3 - 5 9" Soft Tortillas
  • 1/4lb Sliced Deli Rotisserie Chicken
Instructions
  1. Cook bacon, drain and crumble
  2. Add spinach, cream cheese, salt, pepper, mayonnaise and green onion. Mix together well
  3. Spread mixture on tortillas
  4. Place slices of chicken on top
  5. Roll tortillas
  6. Place in refrigerator covered for 1 - 4 hours
  7. Preheat oven to 400 degrees
  8. Bake for 7 - 10 minutes
  9. Slice and serve
