Scalloped Onions and Almonds
From the Manassas Gourmet Club Dinner "An English Holiday"
Ingredients
  • 12 Small Boiling Onions
  • 1C Diced Celery
  • 1/2C Sliced Almonds, toasted
  • 2Tbsp Grated Parmesan Cheese
  • 1/4C Butter or Margarine
  • 3Tbsp Flour
  • 1C Milk
  • 1/2C Half and Half
  • 1/2+tsp Salt
  • 1/8tsp Pepper
  • Paprika
Instructions
  1. Cook onions and celery in boiling water 10 - 15 minutes or until vegetables are tender.
  2. Drain well
  3. Place vegetables in greased 2 qt casserole
  4. Sprinkle with diced almonds and Parmesan then set aside
  5. Melt butter in saucepan
  6. Add flour, stirring until smooth
  7. Cook 1 minute then add milk and half and half, stirring constantly until thick and bubbly
  8. Add salt and pepper, stir well
  9. Pour sauce over onion mixture
  10. Sprinkle with Paprika
  11. Bake at 350 degrees for 30 minutes
