Rice with Black Beans
Serves 4
Ingredients
  • 1Tbsp Oil
  • 1 Med Onion, chopped
  • 2 Cloves garlic, minced
  • 114 1/2 oz can Stewed Tomatoes
  • 115 oz can Black beans, rinsed and drained
  • 2/3C Water
  • 1tsp Dried Oregano
  • 1 1/2C Instant Brown Rice, uncooked
Instructions
  1. Heat oil in large skillet over medium heat
  2. Add onion and garlic
  3. Cook and stir until tender but not browned
  4. Stir in tomatoes, beans, water and oregano
  5. Bring to a boil
  6. Stir in rice
  7. Reduce heat to low, cover and simmer for 5 minutes
  8. Remove from heat
  9. Let stand 5 minutes before serving.
