Red Cabbage
From the Manassas Gourmet Club Dinner "Oktober Fest" 8 - 10 servings
Ingredients
  • 2 1/2lbs Red Cabbage, shredded
  • 3 Large Cooking Apples, peeled and sliced
  • 2 Large Onions, sliced
  • 3/4C Boiling Water
  • 1/2C Red Currant Jam
  • 1/4C Firmly Packed Brown Sugar
  • 1Tbsp Butter
  • 1 Bay leaf
  • 2tsp Salt
  • 1/4tsp Pepper
  • 1/4C White Vinegar
  • 1 1/2Tbsp Flour
Instructions
  1. Put cabbage i a Dutch oven with cold water to cover. Let stand 15 minutes and drain
  2. Add apples, onions, boiling water, jam, brown sugar, butter, bay leaf, salt and pepper
  3. Bring to a boil
  4. Combine vinegar and flour, stirring until smooth and gradually add to cabbage mixture
  5. Cook stirring constantly until thickened
  6. Reduce heat and simmer for 2 hours uncovered
  7. Remove bay leaf and serve
