Potato Latkes with Applesauce
From the Manassas Gourmet Club Dinner "Oktober Fest" 6 - 8 servings
Ingredients
  • 5 Med Baking Potatoes, peeled and shredded
  • 1 Med Onion, grated
  • 2 Eggs, beaten
  • 3/4C Flour
  • 1/4tsp Baking Powder
  • 1tsp Salt
  • Dash Pepper
  • Vegetable Oil
  • Applesauce
Instructions
  1. Press potato between paper towels to remove excess moisture
  2. Combine potato, onion, eggs, flour, baking powder, salt and pepper and mix well
  3. Drop 1/4 cup potato mixture at a time into 1/8" hot oil
  4. Press each into a 3" round with back of a fork
  5. Fry until golden brown, turning once
  6. Drain
  7. Serve with applesauce
