Pesto Barley Salad
Note - Must be chilled 4 to 24 hours before serving. Six servings
Ingredients
  • 1 1/2C Water
  • 1/4tsp Salt
  • 1C Quick Cooking Barley
  • 1C Bite Sized Fresh Broccoli Florets or Frozen Cut Broccoli
  • 1/2C Sweet Red or Green Pepper, chopped
  • 1/4C Mayonnaise or Salad Dressing
  • 1/4C Creamy Parmesan Salad Dressing
  • 1/4C Pesto (purchased)
  • Lettuce Leaves
Instructions
  1. Heat water and salt to boiling
  2. Slowly add barley
  3. Return to a boil
  4. Reduce heat
  5. Cover and simmer for 10 - 12 minutes until tender
  6. Rinse barley with cold water, drain
  7. Cook broccoli in small amount of boiling salt water about 4 minutes till tender, then drain
  8. In a large bowl, stir together barley, broccoli and sweet pepper
  9. For dressing, stir together mayonnaise, salad dressing and pesto
  10. Pour dressing over barley mixture to coat
  11. Cover and chill for 4 to 24 hours before serving
  12. To serve, line bowls with lettuce leaves and spoon barley mixture into lettuce.
