Mee Krob
Sweet Sticky Noodles From the Manassas Gourmet Club Siamese Surprise Dinner. 6 to 8 servings
Ingredients
  • 1/2C Sugar
  • 1/4C Water
  • 1 1/2Tbsp Ketchup
  • 1Tbsp Tomato Paste
  • 1Tbsp Lemon Juice
  • 1Tbsp Fish Sauce
  • 2Tbsp Shredded Carrot
  • 1/2 Egg, beaten
  • 1/4tsp Flour
  • 1 1/2C Vegetable Oil
  • 4oz Thin Rice Stick Noodles
  • 6 sm Shallots, finely chopped
  • 3 lrg Cloves Garlic, finely chopped
  • 1tsp Fish Sauce
  • Dash Black pepper
  • 1/4lb Bean Sprouts
  • 1/2C Lightly Packed Cilantro Sprgs
  • 16 Med sized Shrimp, peeled and de-veined
Instructions
  1. Combine sugar, water, ketchup, tomato paste, lemon juice, and 1 Tbsp fish sauce in a measuring cup and set aside.
  2. Half fill a small saucepan with water and bring to a boil
  3. Add carrot and boil for 1 minute
  4. Combine egg and flour in small bowl and set aside
  5. Heat oil in a wok to 375 degrees or until a 1" bread cube turns golden brown in 50 seconds.
  6. Take a small handful of rice sticks, break up and drop in oil
  7. Press with spatula to submerge completely. Almost instantly, the rice sticks will puff up.
  8. Remove and drain on paper towels. Repeat until all noodles are fried.
  9. Remove any noodle scraps from the oil.
  10. Whisk egg mixture, then pour into oil. Egg will puff up
  11. Fry until lightly browned
  12. Remove and drain on paper towels. Set aside for garnish.
  13. Drain oil from wok, reserving the oil.
  14. Clean wok
  15. Reheat 1 1/2 Tbsp oil in wok over medium heat
  16. Add shallots and garlic. Cook until limp and lightly browned 1 1/2 to 2 min.
  17. Add shrimp, cook 2 - 3 minutes or until pink
  18. Stir in 1 tsp fish sauce and pepper
  19. Remove shrimp mixture from wok to a plate
  20. Add sugar mixture to wok, boil until reduced to a thick, syrupy glaze about 5 min.
  21. Mixture must be almost dry or it will wilt the noodles.
  22. Stir shrimp into the glaze.
  23. Turn off heat
  24. Add rice sticks to the wok, stir until coated in glaze, breaking noodles slightly while stirring
  25. Arrange on a large platter, press into a mound
  26. Arrange bean sprouts around edge
  27. Sprinkle noodles with carrots, then cilantro sprigs
  28. Arrange fried egg in center of the noodles, tear into pieces, arrange with bean sprouts.
  29. Serve at once.
