Leche Frita
Fried Milk. From the Manassas Gourmet Club Night of Discovery Dinner celebrating Columbus Day. 8 servings.
Ingredients
  • 1/2C Sugar
  • 1/2C Cornstarch
  • 1/4tsp Ground Nutmeg
  • 3C Milk
  • 1Tbsp Margarine or Butter
  • 1/4tsp Grated Lemon Peel
  • 2 Eggs - beaten
  • 3/4C Dry Unseasoned Bread Crumbs
  • Vegetable Oil
Instructions
  1. Mix sugar, cornstarch and nutmeg in 3 qt saucepan
  2. Gradually stir in milk
  3. Heat to boiling over medium heat, stirring constantly. Boil for 1 minute
  4. Remove from heat
  5. Stir in margarine and lemon peel
  6. Spread evenly in ungreased 8" square baking dish
  7. Refrigerate uncovered until firm - 3 hrs
  8. Cut custard into 2" squares with wet knife
  9. Dip custard squares in eggs
  10. Coat with bread crumbs
  11. Heat oil (1 - 11/2" deep) to 360 degrees
  12. Fry 2 to 3 squares at a time until light golden brown - 1-2 minutes each
  13. Sprinkle with powdered sugar when cooled, if desired.
