Jeanette's Cinnamon Rolls
From her recipe cards. Great treat.
Ingredients
  • 1cake yeast - dissolved in 1/4 C warm water.
  • 1C Milk scalded and cooled
  • 7/4C Sugar
  • 1/3C Shortening
  • 1tsp Salt
  • 5C sifted flour
  • 2 Eggs - beaten
  • Melted butter
  • Cinnamon & sugar mixture
Instructions
  1. Dissolve yeast first
  2. Scald milk
  3. Add sugar, salt and shortening to milk.
  4. Cool milk mixture
  5. Add beaten eggs and mix
  6. Add yeast
  7. Add some flour and beat well
  8. Continue adding flour - just enough to make dough elastic
  9. Pour onto a well floured board
  10. Knead the rest of the flour in until dough does not stick to unfloured surface.
  11. Put in a greased bowl
  12. Let rise about one hour until double in size.
  13. Punch down and let rise again
  14. Rollout dough to about 1/2 " thick
  15. Spread with melted butter
  16. Sprinkle with cinnamon and sugar
  17. Roll dough into a tube and cut about 1 - 1 1/2 inches apart.
  18. Place rolled rolls on a cookie sheet and let rise again until it feels light.
  19. Bake in a 415 - 425 degree oven for a few minutes then lower temperature to 350 degrees and bake for 20 minutes.
