Frozen Lemon Dessert

Ingredients
Crust
  • 1 1/4C Graham Crackers (crushed)
  • 1/4C Melted Margarine
  • 1/2C Sugar
Filling
  • 2/3C Sugar
  • 1/8tsp Salt
  • 3 Egg Yolks
  • 1/4C Fresh Lemon Juice
  • 1Tbsp Grated Lemon Rind
  • 3 Egg whites beaten stiff
  • 1/2C Evaporated Milk
Instructions
Crust
  1. Mix all ingredients together
  2. Press one cup of mixture in bottom of tray
  3. Reserve the rest for the top.
Filling
  1. Cook in top of a double boiler until thick
  2. Cool
  3. Fold in beaten egg whites
  4. Beat evaporated milk until it forms peaks
  5. Fold into lemon moisture
  6. Poor into crust in tray
  7. Top with remaining graham cracker mixture.
  8. Put in freezer - serve frozen
